Impossible Broccoli-Chicken Pie

Ingredients

  • 1 pkg. frozen chopped broccoli
  • 12 oz. shredded Cheddar cheese
  • 1 1/2 cups cooked chicken, cut up
  • 2/3 cup chopped onion
  • 1 1/2 cups milk
  • 3 eggs
  • 3/4 cup Bisquick
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 10-inch pie plate.
  3. Rinse broccoli under water to thaw; drain thoroughly.
  4. Mix broccoli, 2 cups of cheese, chicken, and onion in the pie plate.
  5. In a blender or using a hand beater, beat milk, eggs, Bisquick, salt, and pepper until smooth.
  6. Pour the mixture over the broccoli mixture in the pie plate.
  7. Bake until a knife inserted in the center comes out clean, about 25 to 35 minutes.
  8. Top with the remaining 1/2 cup of cheese and bake until cheese is melted, about 2 to 5 minutes.
  9. Remove from oven and cool for 5 minutes.
  10. Serve with a crisp salad and rolls.
