Ingredients

  • 2 pkg. frozen chopped broccoli
  • 3 c. shredded Cheddar cheese
  • 2/3 c. chopped onion
  • 1 1/3 c. milk
  • 3 eggs
  • 3/4 c. buttermilk baking mix
  • 3/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Heat oven to 400°.
  2. Grease a 10 x 1 1/2-inch pie plate. Rinse broccoli to thaw; drain.
  3. Mix broccoli, 2 cups of the cheese, and onion in the pie plate.
  4. Beat milk, eggs, baking mix, salt, and pepper until smooth.
  5. Pour the mixture into the pie plate.
  6. Bake for approximately 25 to 35 minutes or until a knife comes out clean.
  7. Top with remaining cheese.
  8. Bake just until the cheese is melted, approximately 1 to 2 minutes longer.
  9. Let stand for 5 minutes.
  10. Garnish with tomato slices.
