Instructions
- Preheat oven to 350°F.
- Grease a 10-inch, 1 1/2-inch deep pie plate.
- In a blender or with a hand beater, beat all ingredients except coconut for 30 seconds on high or 1 minute.
- Pour the mixture into the prepared pie plate.
- Sprinkle the top with flaked coconut.
- Bake until a knife inserted in the center comes out clean, about 40 to 45 minutes.
- Garnish with sliced pineapple and whipped cream, if desired.
- Refrigerate any remaining pie.
