Ingredients

  • 1/4 cup milk
  • 1/4 cup rum
  • 2 tablespoons margarine or butter, softened
  • 4 eggs
  • 15 oz can cream of coconut
  • 8 oz can crushed pineapple, well drained
  • 1 cup flaked coconut
  • 1/2 cup Bisquick baking mix

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 10-inch, 1 1/2-inch deep pie plate.
  3. In a blender or with a hand beater, beat all ingredients except coconut for 30 seconds on high or 1 minute.
  4. Pour the mixture into the prepared pie plate.
  5. Sprinkle the top with flaked coconut.
  6. Bake until a knife inserted in the center comes out clean, about 40 to 45 minutes.
  7. Garnish with sliced pineapple and whipped cream, if desired.
  8. Refrigerate any remaining pie.
