Ingredients

  • 6 oz. frozen small shrimp
  • 1 cup shredded American cheese
  • 3 oz. cream cheese, cubed
  • 1/4 cup chopped green onion
  • 2 cups milk
  • 1 cup biscuit mix
  • 4 eggs
  • 3/4 teaspoon salt
  • dash of nutmeg

Instructions

  1. Preheat oven to 400°F and lightly grease a deep 10-inch pie plate.
  2. Mix the frozen small shrimp, shredded American cheese, cubed cream cheese, and chopped green onion in the pie plate.
  3. In a blender or with a hand beater, beat the eggs, milk, biscuit mix, salt, and dash of nutmeg until smooth, about 15 seconds in a blender or 1 minute with a hand beater.
  4. Pour the egg mixture over the shrimp mixture in the pie plate.
  5. Bake until golden brown and a knife inserted comes out clean, approximately 35 to 40 minutes.
  6. Let stand for 5 minutes to set before slicing.
  7. Cut into 6 or 8 servings and serve.
