Impressive Chicken Manicotti combines tender pasta with a creamy chicken filling, savory mushroom sauce, and melted Cheddar, making it a hearty and flavorful dish suitable for family dinners or entertaining guests.

Ingredients

  • 8 manicotti shells
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 2 cups chopped cooked chicken
  • 4 ounces sliced mushrooms, drained
  • 2 tablespoons butter or margarine, melted
  • 1/4 cup warm water
  • 1/2 teaspoon chicken bouillon
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook manicotti shells, drain, and set aside.
  2. Mix cream of chicken soup and sour cream together.
  3. Combine half of the soup mixture with the cooked, chopped chicken and mix well.
  4. Reserve the remaining soup mixture for later.
  5. Stuff the cooked shells with the chicken mixture and place them in a greased dish.
  6. Saute the sliced mushrooms and chopped onion in melted butter until tender; set aside.
  7. Dissolve chicken bouillon in warm water and add to the reserved soup mixture.
  8. Stir the soup mixture into the mushroom and onion mixture.
  9. Spoon the mushroom mixture over the stuffed manicotti shells.
  10. Bake uncovered at 350°F for 15 minutes.
  11. Sprinkle shredded Cheddar cheese on top and bake for an additional 5 minutes until cheese melts and bubbly.
