Ingredients

  • 1/4 cup white wine vinegar
  • 1/4 cup salad oil
  • 2 teaspoons chutney, chopped
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons curry powder
  • 1 teaspoon dry mustard
  • 8 cups fresh spinach, torn
  • 1 1/2 cups unpared apple, chopped
  • 1/2 cup light raisins
  • 1/2 cup peanuts
  • 2 teaspoons green onions, sliced

Instructions

  1. In a screw-top jar, combine white wine vinegar, salad oil, chopped chutney, salt, curry powder, and dry mustard.
  2. Cover and chill the dressing.
  3. Place torn fresh spinach in a large salad bowl.
  4. Add chopped unpared apple, light raisins, peanuts, and sliced green onions to the spinach.
  5. Shake the dressing well and pour over the salad.
  6. Toss the salad to combine and serve.
