Ingredients

  • 2 cups diced cooked chicken breast
  • 3/4 cup diced celery
  • 1/4 cup diced onion
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 cup evaporated skimmed milk
  • 1/4 cup egg substitute
  • 1 Tbsp. reduced sodium Worcestershire sauce
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • vegetable cooking spray
  • 1/3 cup whole cranberry sauce

Instructions

  1. Combine the diced cooked chicken, celery, onion, sliced mushrooms, evaporated skimmed milk, egg substitute, Worcestershire sauce, salt, and white pepper.
  2. Divide the mixture equally into six 6-ounce custard cups coated with cooking spray.
  3. Cover each custard cup loosely with foil.
  4. Bake at 350°F for 50 minutes or until a knife inserted in the center comes out clean.
  5. Uncover and let stand for 5 minutes.
  6. Remove the chicken from the custard cups.
  7. Top each serving with cranberry sauce.
