Ingredients
- 2 cups diced cooked chicken breast ⓘ
- 3/4 cup diced celery
- 1/4 cup diced onion ⓘ
- 1 (4 oz.) can sliced mushrooms, drained ⓘ
- 1 cup evaporated skimmed milk ⓘ
- 1/4 cup egg substitute ⓘ
- 1 Tbsp. reduced sodium Worcestershire sauce ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. white pepper ⓘ
- vegetable cooking spray ⓘ
- 1/3 cup whole cranberry sauce ⓘ
Instructions
- Combine the diced cooked chicken, celery, onion, sliced mushrooms, evaporated skimmed milk, egg substitute, Worcestershire sauce, salt, and white pepper.
- Divide the mixture equally into six 6-ounce custard cups coated with cooking spray.
- Cover each custard cup loosely with foil.
- Bake at 350°F for 50 minutes or until a knife inserted in the center comes out clean.
- Uncover and let stand for 5 minutes.
- Remove the chicken from the custard cups.
- Top each serving with cranberry sauce.
