Ingredients

  • 7 Tbsp. peanut oil
  • 1 Tbsp. lemon juice
  • 1 tsp. soy sauce
  • 2 cloves garlic, finely chopped
  • 1 tsp. onion flakes
  • pinch of chili powder
  • 1 1/2 c. crunchy peanut butter
  • 3 small hot chile peppers, cored, finely chopped and soaked
  • 1/2 coconut milk
  • 1/2 c. dry roasted unsalted peanuts, coarsely chopped

Instructions

  1. Mix all ingredients together in a saucepan.
  2. Heat until the mixture becomes bubbly.
  3. Pour the hot peanut sauce over baked or grilled chicken breasts or skewers.
