Ingredients

  • 2 Tbsp. butter
  • 1 cup rice
  • 2 1/2 cups boiling water
  • 1/3 cup butter
  • 1/4 cup finely chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 1 package frozen peas, thawed
  • 1 can water chestnuts, diced

Instructions

  1. In a skillet, melt 2 tablespoons of butter.
  2. Add rice; cook until light brown.
  3. Turn the rice into a 1 1/2 quart casserole.
  4. Pour in boiling water and stir with a fork.
  5. Cover the casserole with foil.
  6. Bake at 350°F for 30 minutes.
