- 2 1/2 cups sugar
- 2/3 cup butter, softened ⓘ
- 4 eggs ⓘ
- 2 cups cooked pumpkin ⓘ
- 2/3 cup apple cider ⓘ
- 1/3 cup milk with 1 teaspoon vinegar ⓘ
- 3 1/2 cups flour ⓘ
- 1/2 teaspoon baking powder ⓘ
- 2 teaspoons baking soda ⓘ
- 1 1/2 teaspoons salt ⓘ
- 1 teaspoon cinnamon ⓘ
- 1 teaspoon cloves ⓘ
- 1 teaspoon allspice ⓘ
- 1/4 teaspoon nutmeg ⓘ
- 1/2 cup chopped nuts ⓘ
- 1 cup raisins or mincemeat ⓘ
Instructions
- Cream sugar and softened butter together until well combined.
- Beat in the eggs one at a time until mixture is smooth.
- Add cooked pumpkin, apple cider, and milk mixed with vinegar; blend well.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, allspice, and nutmeg.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Fold in chopped nuts and raisins or mincemeat.
- Pour the batter into two greased 9 x 5-inch loaf pans.
- Bake at 350°F (175°C) for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
