Ingredients

  • 2 1/2 cups sugar
  • 2/3 cup butter, softened
  • 4 eggs
  • 2 cups cooked pumpkin
  • 2/3 cup apple cider
  • 1/3 cup milk with 1 teaspoon vinegar
  • 3 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped nuts
  • 1 cup raisins or mincemeat

Instructions

  1. Cream sugar and softened butter together until well combined.
  2. Beat in the eggs one at a time until mixture is smooth.
  3. Add cooked pumpkin, apple cider, and milk mixed with vinegar; blend well.
  4. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, cloves, allspice, and nutmeg.
  5. Gradually stir the dry ingredients into the wet mixture until just combined.
  6. Fold in chopped nuts and raisins or mincemeat.
  7. Pour the batter into two greased 9 x 5-inch loaf pans.
  8. Bake at 350°F (175°C) for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
