Ingredients

  • 1 garlic clove, minced
  • 1/8 tsp. pepper
  • 2 Tbsp. olive oil
  • 3 large carrots, shredded
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice
  • 3 Tbsp. fresh minced parsley

Instructions

  1. Combine garlic, salt, pepper, lemon juice, olive oil, and 2 tablespoons of parsley in a bowl.
  2. Toss the shredded carrots with the dressing mixture to coat evenly.
  3. Transfer the carrot mixture onto a serving plate and sprinkle with the remaining 1 tablespoon of parsley.
