Ingredients

  • 1 1/4 cups warm water (105-115°F)
  • 1 package active dry yeast
  • 1 tablespoon honey
  • 3/8 teaspoon liquid artificial sweetener or 1 tablespoon sugar
  • 2 teaspoons salt
  • 2 tablespoons butter
  • 3 cups sifted flour
  • 1/3 cup seedless raisins
  • 1/4 cup diced candied fruit mixture
  • 1/4 cup chopped almonds
  • 3/4 teaspoon anise extract
  • 1/4 teaspoon vanilla extract

Instructions

  1. In the bowl of an electric mixer, dissolve yeast in warm water.
  2. Add honey, artificial sweetener or sugar, salt, butter, and half the flour.
  3. Beat for 2 minutes at medium speed or 300 strokes by hand.
  4. Add remaining flour to fruit and nuts, then add to yeast mixture along with anise and vanilla extracts.
  5. Blend well until combined.
  6. Cover and let rise in a warm place until doubled in size.
  7. Stir down the batter.
  8. Spread the batter into two well-buttered 1-pound coffee cans.
  9. Let rise until the batter reaches 3/4 inch from the top of the cans.
  10. Bake in a preheated oven at 375°F (190°C) for about 40 minutes.
  11. Cool on a wire rack before serving.
