Ingredients

  • 1 lb. sweet Italian sausage, casings removed

  • 1 large carrot, sliced

  • 2 Tbsp. basil
  • 2 Tbsp. oregano
  • 8 to 10 oz. fresh cheese tortellini
  • freshly grated Parmesan cheese

Instructions

  1. Saute the sausage in a Dutch oven for 10 minutes until crumbled and cooked through.
  2. Transfer the sausage to a large bowl using a slotted spoon.
  3. Pour off all but 1 tablespoon of fat from the Dutch oven.
  4. Add chopped onion and sliced garlic to the pan and saute until translucent, about 5 minutes.
  5. Return the cooked sausage to the pan. Add beef stock, chopped tomatoes, tomato sauce, sliced zucchini, sliced carrot, diced green pepper, red wine, basil, and oregano.
  6. Simmer the mixture until the vegetables are tender, about 40 minutes.
  7. Add the tortellini to the soup and cook until tender, about 8 minutes.
  8. Season with salt and pepper to taste.
  9. Serve the soup in bowls and sprinkle with freshly grated Parmesan cheese.
