Ingredients

  • 1 unbaked 9-inch pastry shell
  • 3 slices bacon
  • 1/2 cup chopped onion
  • 1 (17 oz.) can cream-style corn
  • 1 to 2 jalapeno peppers, chopped
  • 2 eggs, beaten
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Prick the bottom and sides of the pastry shell with a fork.
  2. Bake at 400°F for 3 minutes, then remove from oven and gently prick again.
  3. Bake for an additional 5 minutes, then cool.
  4. Cook bacon until crispy and crumble.
  5. Saute chopped onion until translucent.
  6. Combine cream-style corn, chopped jalapenos, beaten eggs, flour, salt, pepper, and sautéed onion, mixing well.
  7. Pour the mixture into the prepared pastry shell and sprinkle with crumbled bacon.
  8. Bake at 375°F for 45 minutes or until set.
