Ingredients

  • 8 oz. vermicelli
  • 1 cucumber
  • 1/2 tsp. salt
  • 1/4 lb. mushrooms
  • 1 c. cherry tomatoes
  • 1/2 lb. cooked shrimp
  • 1 green onion

Instructions

  1. Cook the vermicelli until barely tender to the bite, approximately 9 minutes.
  2. Drain the noodles, rinse with cold water, and drain again.
  3. Cut the noodles into short strands.
  4. Mix the noodles with the soy dressing and chill overnight.
  5. The next day, mix the sliced cucumber with salt and let stand for approximately 20 minutes.
  6. Rinse the cucumber well and drain.
  7. Combine the cucumber, noodles, sliced mushrooms, halved cherry tomatoes, cooked shrimp, and green onion in a bowl and mix.
