Jean'S Chicken Soup

Ingredients

  • 1 or 2 whole chickens
  • 1/2 cup barley or rice
  • 1 1/2 cups finely diced carrots
  • 1 cup chopped onion
  • 1 cup chopped celery
  • salt and pepper to taste
  • 2 bay leaves
  • pinch of tarragon
  • pinch of saffron
  • 2 or 3 chicken bouillon cubes
  • 3 cups or more water
  • 1/2 teaspoon marjoram
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon basil

Instructions

  1. Put chickens in a large pot and cover with water.
  2. Bring to a boil, then lower heat to simmer.
  3. Cook until chickens are tender, then remove from heat and let cool.
  4. Remove the meat from the chickens and cut into bite-sized pieces.
