Ingredients

  • 2 cups cooked, diced chicken or turkey
  • 1 can cream of mushroom soup
  • 3/4 cup mayonnaise
  • 2 eggs
  • 1 1/2 cups grated Cheddar cheese
  • 1/2 onion, chopped
  • 1 sleeve Town House crackers, crushed

Instructions

  1. Saute chopped onion in 1/2 tablespoon of butter until translucent.
  2. In a mixing bowl, combine cooked diced chicken, cream of mushroom soup, mayonnaise, eggs, grated Cheddar cheese, and sautéed onion. Mix well.
  3. Transfer the mixture into a casserole dish.
  4. Top the casserole with crushed Town House crackers.
  5. Bake in a preheated oven at 400°F (200°C) until bubbly in the center, about 30 to 40 minutes.
