Ingredients

  • 1 c. shelled raw peanuts with skins on
  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1/8 tsp. salt
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Instructions

  1. Sift together peanuts, sugar, syrup, and salt in a 1 1/2-quart microwave-safe container sprayed with Pam.
  2. Cook for 8 minutes on High, stirring after 4 minutes.
  3. Stir in butter and vanilla.
  4. Cook for 2 minutes longer.
  5. Add baking soda and stir quickly until light and foamy.
  6. Immediately pour onto Pam-sprayed baking sheet. Spread to 1/4-inch thickness.
  7. Let cool.
  8. Break into pieces.
