- Combine the grated Monterey and Cheddar cheeses with the green chilies and place into a well-buttered jelly roll pan.
- In a separate bowl, beat the egg whites and mix in the egg yolks, flour, salt, and pepper.
- Add the egg mixture to the beaten egg whites and combine well.
- Pour the egg mixture over the cheese and chili layer in the pan.
- Bake at 325°F (160°C) for 60 minutes.
- Remove from the oven and spread the diced tomatoes evenly over the top.
- Bake for an additional 30 minutes until set and golden.
- Test with a knife; it should come out clean before serving.
