John Wayne Cheese Canapes

Ingredients

  • 2 cans (4 oz. each) green chilies
  • 1 lb. Monterey cheese, grated
  • 1 lb. Cheddar cheese, grated
  • 2 cups canned milk
  • 4 egg whites, beaten
  • 4 egg yolks
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tomatoes, diced

Instructions

  1. Combine the grated Monterey and Cheddar cheeses with the green chilies and place into a well-buttered jelly roll pan.
  2. In a separate bowl, beat the egg whites and mix in the egg yolks, flour, salt, and pepper.
  3. Add the egg mixture to the beaten egg whites and combine well.
  4. Pour the egg mixture over the cheese and chili layer in the pan.
  5. Bake at 325°F (160°C) for 60 minutes.
  6. Remove from the oven and spread the diced tomatoes evenly over the top.
  7. Bake for an additional 30 minutes until set and golden.
  8. Test with a knife; it should come out clean before serving.
