Ingredients

  • 1/2 cup peanut oil
  • 1/2 cup all-purpose flour
  • 1 large Vidalia onion, chopped
  • 1 large bell pepper, chopped
  • 4 banana peppers, diced
  • 2 cloves garlic, finely minced
  • 1 (8 oz.) can tomato sauce
  • 1 (10 oz.) can diced tomatoes with green chili peppers
  • 1 cup chopped okra
  • 2 pounds shrimp, peeled
  • salt
  • pepper
  • Cajun seasoning salt

Instructions

  1. Heat peanut oil in a heavy pot or saucepan.
  2. Sprinkle flour into the hot oil, stirring constantly to make a roux.
  3. Cook the roux over low heat for 40 to 45 minutes, stirring often, until it turns the color of caramel and has a gravy-like consistency.
  4. Add chopped onion, bell pepper, banana peppers, and minced garlic to the roux; cook for 15 minutes.
  5. Stir in tomato sauce, diced tomatoes with green chili peppers, and chopped okra; cook an additional 15 minutes.
  6. Add shrimp to the mixture and cook for another 10 minutes.
  7. Season to taste with salt, pepper, and Cajun seasoning salt.
  8. Serve over cooked rice.
