Ingredients

  • 3.5 lb. top round beef, cut into 1/2 inch cubes
  • 5 Tbsp. oil
  • 2 c. chopped onion
  • 4 cloves garlic, minced
  • 4 Tbsp. chili powder
  • 1 1/2 tsp. oregano
  • 1 1/2 tsp. ground cumin
  • 1 tsp. crushed red pepper
  • 2 cans whole tomatoes
  • 2 cans beef broth
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2 Tbsp. yellow cornmeal

Instructions

  1. Pat the meat dry with paper towels.
  2. Heat 5 tablespoons of oil in a large pot over medium-high heat.
  3. Add the cubed meat all at once and sear, turning until all sides are browned.
  4. Remove the meat from the pot and place in a bowl.
  5. Add 2 tablespoons of chopped onion and minced garlic to the pot and sauté until limp, not browned.
  6. Add chili powder, oregano, ground cumin, and crushed red pepper; cook for 1 minute to toast spices.
  7. Pour in the beef broth and add the canned whole tomatoes, breaking them up with a spoon as you stir.
  8. Add the browned meat back into the pot, along with salt, sugar, and 2 tablespoons of yellow cornmeal.
  9. Cover the pot and simmer for 40 to 50 minutes, until the meat is tender and flavors meld.
  10. Cool the chili and refrigerate overnight before serving.
