Ingredients

  • 2 boxes Betty Crocker Supreme brownie mix
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 (5 1/2 oz.) box Junior Mints
  • Hershey syrup pouch
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup butter or margarine
  • 1/2 cup shortening
  • 1 cup strong brewed coffee or water
  • 1/2 c. (1 stick) butter or margarine
  • 1/2 c. shortening
  • 1 c. strong brewed coffee or water

Instructions

  1. Preheat the oven and prepare a 17 1/2 x 11-inch baking pan.
  2. Mix one box of brownie mix with 2 eggs, 1/4 cup vegetable oil, and 1/4 cup water until well combined.
  3. Pour the brownie batter into the prepared baking pan and spread evenly.
  4. Bake according to the brownie mix package instructions, typically around 25-30 minutes, until a toothpick inserted in the center comes out clean.
  5. Cool the baked brownie layer completely in the pan.
  6. Unwrap the Junior Mints and evenly distribute them over the cooled brownie layer.
  7. Prepare the second batch of brownie batter with the remaining ingredients and pour over the Junior Mints layer, spreading evenly.
  8. Bake again for about 20-25 minutes until set and a toothpick inserted in the center comes out clean.
  9. Allow the brownies to cool completely before cutting into squares and serving.
