Ingredients

  • 1 tsp. olive oil
  • 1/2 large onion, chopped
  • 1 or 2 cloves garlic, chopped
  • 2 c. navy beans
  • smoked kielbasi, sliced
  • 4 to 6 c. chicken stock
  • 1/4 tsp. crushed red pepper
  • fresh kale greens
  • 2 to 4 potatoes, chopped
  • 2 Tbsp. sugar

Instructions

  1. Soak navy beans in water for 4 to 6 hours or overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onions, sliced kielbasi, and chopped garlic to the pot.
  4. Saute until onions are translucent and kielbasi is slightly browned, do not brown.
  5. Pour in chicken stock and add soaked navy beans, then bring to a simmer and cook for 15 minutes.
  6. Add chopped kale greens, crushed red pepper, and sugar to the pot.
  7. Let cook for an additional 20 minutes.
  8. Add chopped potatoes to the stew.
  9. Stir well to combine all ingredients.
  10. Continue cooking for 2 hours, stirring occasionally until flavors meld and beans are tender.
