- Soak navy beans in water for 4 to 6 hours or overnight.
- In a large pot, heat olive oil over medium heat.
- Add chopped onions, sliced kielbasi, and chopped garlic to the pot.
- Saute until onions are translucent and kielbasi is slightly browned, do not brown.
- Pour in chicken stock and add soaked navy beans, then bring to a simmer and cook for 15 minutes.
- Add chopped kale greens, crushed red pepper, and sugar to the pot.
- Let cook for an additional 20 minutes.
- Add chopped potatoes to the stew.
- Stir well to combine all ingredients.
- Continue cooking for 2 hours, stirring occasionally until flavors meld and beans are tender.
