Ingredients

  • 8 Tbsp. butter
  • 1 cup chopped pecans or slivered almonds
  • 1/2 cup onion, diced
  • 2 cups long grain rice
  • 4 cups chicken broth
  • 1 tsp. salt if needed
  • 1/4 tsp. thyme
  • 1/8 tsp. pepper
  • 2 Tbsp. parsley, minced
  • sliced mushrooms

Instructions

  1. Melt 3 tablespoons of butter in a large skillet; add pecans and sauté for 10 minutes or until lightly browned.
  2. Remove pecans from the skillet, cover, and set aside.
  3. In the same skillet, melt the remaining butter; add diced onion and sauté until tender.
  4. Add rice and stir thoroughly to coat the grains.
  5. Add chicken broth, salt (if needed), thyme, and pepper. Cover and simmer for 18 to 20 minutes until rice is tender and all liquid is absorbed.
  6. Garnish with minced parsley and sliced mushrooms if desired.

Tips & Substitutions

For a more robust flavor, consider toasting the rice in the skillet after sautéing the onions. If you don't have pecans or slivered almonds, walnuts or sunflower seeds can work as substitutes. To enhance the dish, add some dried cranberries or raisins for a hint of sweetness. Adjust the salt based on your chicken broth's sodium content.

Serving Suggestions

Nutty Rice Pilaf pairs beautifully with grilled chicken or roasted vegetables. For a complete meal, serve alongside Oven Fried Drumsticks or a fresh green salad. The nutty flavor complements dishes like Honey Basted Chicken, making it a versatile side for any occasion.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of chicken broth to the rice pilaf in a saucepan over low heat, stirring occasionally until warmed through. You can also microwave it, covered, in intervals while stirring for even heating.

Frequently Asked Questions

Can I use brown rice instead of long grain rice?

Yes, you can use brown rice, but keep in mind that it requires a longer cooking time and more liquid. Adjust the broth to about 4 1/2 cups and simmer for about 30-40 minutes, or until the rice is tender and the liquid is absorbed.

What can I add for extra protein?

You can add cooked chicken, turkey, or even chickpeas to the pilaf for added protein. Just stir them in during the last few minutes of cooking to heat through without compromising the texture of the rice.

Is it possible to make this dish vegetarian?

Absolutely! Simply substitute the chicken broth with vegetable broth or water. You can also add more vegetables, like bell peppers or peas, to enhance the nutritional value while keeping it vegetarian.
