Ingredients

  • 1/2 lb. white beans
  • 6 to 8 strips bacon
  • 1/2 head cabbage, chopped
  • 1 medium onion, chopped
  • 1 to 1 1/2 cups tomato sauce
  • 1/4 cup brown sugar
  • 1 tablespoon dark molasses
  • 1/2 to 3/4 cup vinegar
  • 1/4 teaspoon black pepper
  • salt to taste

Instructions

  1. Drain soaking beans and cover with fresh water; cook until tender.
  2. Meanwhile, fry bacon until crispy and cut into small bits.
  3. Sauté chopped onion in bacon grease or other oil until translucent.
  4. Add cooked beans, bacon, tomato sauce, vinegar, brown sugar, molasses, black pepper, salt, and garlic powder to the pot.
  5. Stir well and add more water if the soup is too thick.
  6. Add chopped cabbage to the pot, cover, and steam until cabbage is tender.
  7. Taste and adjust vinegar, sugar, garlic, and pepper to achieve a balanced sweet and sour flavor.
