Ingredients

  • 1 whole fryer chicken
  • 1 can tomato juice
  • 1 (28 oz.) can whole tomatoes

Instructions

  1. Cook the whole fryer chicken in water for 1 1/2 hours.
  2. Save the broth from cooking the chicken.
  3. Remove the chicken from the bones and return the meat to the broth.
  4. Place the chicken and broth mixture in a bowl and refrigerate overnight.
  5. Skim off the fat from the chilled broth.
  6. Pour the broth and chicken into a large pan.
  7. Add the canned tomato juice, whole tomatoes, frozen mixed vegetables, cubed potatoes, chopped onions, noodles, bay leaf, and chicken bouillon cubes.
  8. Cook for about 1 to 2 hours until vegetables and noodles are tender.
  9. Remove the bay leaf before serving.
