Kentucky Fruit Cake

Ingredients

  • 15 oz. box raisins
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1/4 cup margarine
  • 1 1/4 cups pecans
  • 2 1/2 cups plain flour
  • 3 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon allspice
  • 1/2 pound green candied cherries
  • 1/2 pound red candied cherries
  • 1 pound candied pineapple

Instructions

  1. Combine raisins, water, and sugar in a saucepan.
  2. Bring to a boil and simmer for 5 minutes.
  3. Add margarine; set aside to cool.
  4. Combine candied fruit with 1/2 cup flour and dredge to coat.
  5. Add beaten eggs to the cooled fruit mixture.
  6. In a separate bowl, mix all dry ingredients including baking powder, soda, salt, cinnamon, cloves, and allspice.
  7. Gradually add dry mixture to the wet ingredients, mixing thoroughly.
  8. Grease and flour a tube pan.
  9. Pour the batter into the prepared pan.
  10. Bake at 275°F (135°C) for 2 1/2 hours.
