A hearty Kenyan vegetable and beef stew with savory tomatoes, potatoes, carrots, and optional greens, perfect for a comforting meal with chapatis or Ugali.

Ingredients

  • 1/4 cup finely chopped onion
  • 1 1/2 cups finely chopped tomatoes
  • 1 tablespoon oil
  • 2 cups chopped potatoes
  • 2 cups chopped carrots
  • 3 cups water
  • 1 tablespoon salt
  • 1 teaspoon chili powder
  • 1 cup green beans (optional)
  • 1 cup shredded cabbage (optional)
  • 1/2 pound precooked ground beef (optional)

Instructions

  1. Chop onions, tomatoes, potatoes, carrots, green beans, and cabbage as desired.
  2. Place potatoes and carrots in water to prevent darkening.
  3. Heat oil in a pan and fry onions until brown.
  4. Add tomatoes and cook on medium until tender.
  5. Add potatoes, carrots, and any optional ingredients to the tomato mixture.
  6. Pour in water, add salt, chili powder, and optional ingredients if desired.
  7. Simmer the stew for 30 minutes until vegetables are cooked and flavors meld.
  8. Serve hot with chapatis or Ugali.
