Kenyan Stew
A hearty Kenyan vegetable and beef stew with savory tomatoes, potatoes, carrots, and optional greens, perfect for a comforting meal with chapatis or Ugali.
Ingredients
- 1/4 cup finely chopped onion ⓘ
- 1 1/2 cups finely chopped tomatoes ⓘ
- 1 tablespoon oil ⓘ
- 2 cups chopped potatoes ⓘ
- 2 cups chopped carrots ⓘ
- 3 cups water ⓘ
- 1 tablespoon salt ⓘ
- 1 teaspoon chili powder ⓘ
- 1 cup green beans (optional) ⓘ
- 1 cup shredded cabbage (optional) ⓘ
- 1/2 pound precooked ground beef (optional) ⓘ
Instructions
- Chop onions, tomatoes, potatoes, carrots, green beans, and cabbage as desired.
- Place potatoes and carrots in water to prevent darkening.
- Heat oil in a pan and fry onions until brown.
- Add tomatoes and cook on medium until tender.
- Add potatoes, carrots, and any optional ingredients to the tomato mixture.
- Pour in water, add salt, chili powder, and optional ingredients if desired.
- Simmer the stew for 30 minutes until vegetables are cooked and flavors meld.
- Serve hot with chapatis or Ugali.
