Kerry'S Green Chili

- Pound the pork tenderloins with a meat hammer to flatten them.
- Season the tenderloins with salt, pepper, soy sauce, and a little water, then wrap in foil.
- Bake in the oven at 325°F for about one hour.
- Remove the tenderloins from the oven and cut or chop into small pieces.
- In a large skillet, melt the butter and sauté the chopped onions for about 10 minutes.
- Add the roasted green chilies and sauté for another 10 minutes.
- In a bowl, mix the flour, salt, and pepper, adding enough vegetable oil to make a smooth but not runny paste.
- Add this mixture to the chili and stir well for 2-3 minutes.
- Transfer the chili to a large soup pot, then add the heated beef broth, diced tomatoes, chopped pork, and garlic.
- Cook on medium-low heat for approximately 4 hours, stirring every 15 to 20 minutes to prevent burning, and add wine as desired.
