Ingredients

  • 6 Tbls butter
  • 5 Cups chopped roasted green chilies
  • 4 small chopped onions
  • 4 cans heated beef broth
  • 1 can diced tomatoes
  • 8 Tbls flour
  • 2 Tbls salt
  • 1 Tbls black pepper
  • 4 garlic cloves
  • 2 pork tenderloins
  • vegetable oil

Instructions

  1. Pound the pork tenderloins with a meat hammer to flatten them.
  2. Season the tenderloins with salt, pepper, soy sauce, and a little water, then wrap in foil.
  3. Bake in the oven at 325°F for about one hour.
  4. Remove the tenderloins from the oven and cut or chop into small pieces.
  5. In a large skillet, melt the butter and sauté the chopped onions for about 10 minutes.
  6. Add the roasted green chilies and sauté for another 10 minutes.
  7. In a bowl, mix the flour, salt, and pepper, adding enough vegetable oil to make a smooth but not runny paste.
  8. Add this mixture to the chili and stir well for 2-3 minutes.
  9. Transfer the chili to a large soup pot, then add the heated beef broth, diced tomatoes, chopped pork, and garlic.
  10. Cook on medium-low heat for approximately 4 hours, stirring every 15 to 20 minutes to prevent burning, and add wine as desired.
