Ingredients

  • 1 lb. ground chuck beef
  • 2 Tbsp. butter
  • 2 Tbsp. diced green chilies
  • 1 (8 oz.) can tomato sauce
  • 1 (1 1/2 oz.) pkg. taco seasoning mix
  • 1/2 c. water
  • 2 eggs
  • 1 c. dairy half and half
  • 1 (6 oz.) pkg. corn chips
  • 8 oz. Monterey Jack cheese
  • 1 c. sour cream

Instructions

  1. In a 2-quart casserole, place the ground beef.
  2. Microwave on High for 5 to 6 minutes, stirring after 3 minutes.
  3. Drain the beef and remove from casserole.
  4. In the casserole, melt the butter over medium heat.
  5. Add diced green chilies and cook for 2 minutes.
  6. Stir in tomato sauce, taco seasoning mix, and water.
  7. Simmer for 5 minutes to blend flavors.
  8. In a bowl, beat eggs and dairy half and half together.
  9. Pour the egg mixture over the beef mixture in the casserole.
  10. Layer corn chips over the mixture.
  11. Sprinkle shredded Monterey Jack cheese on top.
  12. Bake at 350°F (175°C) for 15 minutes until bubbly and cheese melts.
  13. Garnish with sour cream before serving.
