Ingredients

  • 2 c. sugar
  • 4 eggs
  • 4 tsp. coconut extract
  • 1 (16 oz.) carton sour cream
  • 2 c. coconut
  • 4 c. flour
  • 2 tsp. baking powder

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Beat in eggs one at a time, then add coconut extract and sour cream, mixing well.
  3. Stir in coconut until evenly combined.
  4. In a separate bowl, mix flour, baking powder, and baking soda.
  5. Gradually add dry ingredients to the batter, beating until smooth.
  6. Divide the batter evenly between two lightly greased loaf pans.
  7. Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
