Ingredients

  • 1 cup yellow cornmeal
  • 1 cup flour
  • 1/8 to 1/4 cup sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking soda
  • 1 egg
  • 1 cup milk
  • 1/4 cup softened margarine or shortening

Instructions

  1. Mix dry ingredients in a bowl.
  2. Add egg, milk, and margarine. Beat with an eggbeater until nearly smooth.
  3. Do not overbeat.
  4. Bake in an 8-inch square greased pan in a 425°F (220°C) oven for 20 to 25 minutes.
