Ingredients

  • 1/2 cup boiling water
  • 1/2 cup quick cooking oats
  • 2 cups Bisquick baking mix
  • 1/2 cup raisins
  • 1/2 cup chopped nuts
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 4 eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease the bottom only of a 9 x 5 x 3-inch loaf pan.
  3. Pour boiling water over oats in a large bowl; stir until moistened.
  4. Stir in the remaining ingredients: Bisquick, raisins, chopped nuts, honey, vegetable oil, and eggs.
  5. Pour the batter into the prepared loaf pan.
  6. Bake until a wooden pick inserted in the center comes out clean, about 45 to 50 minutes.
  7. Cool for 10 minutes after baking.
  8. Loosen sides of the loaf from the pan.
  9. Cool completely before slicing.
