Ingredients

  • 2 carrots, cubed
  • 4 stalks celery, chopped
  • 2 medium onions, chopped
  • 1/2 cup margarine
  • 1 (14 oz.) can chicken broth
  • 2 cups potatoes, mashed
  • 6 cups milk
  • 6 medium potatoes, cubed
  • 2 medium potatoes, shredded
  • 1 1/2 tsp. salt

Instructions

  1. In a large pan, cook carrots, celery, and onions in margarine until onions are transparent.
  2. In a separate bowl, add chicken broth to mashed potatoes until smooth.
  3. Add the mashed potato mixture to the vegetable mixture, then add milk, cubed potatoes, and shredded potatoes.
  4. Season with salt, pepper, and cheese.
  5. Cook over low heat, stirring frequently, until potatoes are tender and soup is heated through.
