Ingredients

  • 1 pan Light Corn Bread or 1 package commercial stuffing
  • 8 oz lean turkey sausage
  • 2 Tbsp apple juice
  • 1 tsp olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 fresh pears, cored and diced
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp fresh thyme
  • 1 Tbsp poultry seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 1/2 to 2 cups chicken stock

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Crumble the cornbread into small pieces and toast until golden, about 35 minutes.
  3. Place the toasted cornbread in a large bowl.
  4. Remove sausage from casing and brown over medium heat.
  5. Add apple juice to the sausage and simmer, stirring constantly, until the liquid evaporates.
  6. Remove sausage from skillet and add olive oil.
  7. Add chopped onion and celery to the skillet and sauté until translucent, about 8 minutes.
  8. Add the cooked sausage to the bowl.
  9. Stir in diced pears, chopped parsley, thyme, poultry seasoning, salt, and pepper.
  10. Add enough chicken stock to moisten the stuffing to your taste.
  11. Transfer the stuffing to a baking dish, cover with foil, and bake for about 30 minutes.
  12. Remove the foil and continue baking until the top turns golden brown, about 15 minutes.
