Ingredients

  • 6 egg yolks
  • 2 Tbsp. sour cream
  • 1 tsp. vanilla
  • 1 Tbsp. whiskey or lemon juice
  • 1 tsp. salt
  • 2 1/2 to 3 cups sifted flour
  • oil for frying
  • powdered sugar

Instructions

  1. Beat egg yolks, sour cream, vanilla, whiskey or lemon juice, and salt together.
  2. Add enough sifted flour to form a dough that holds together. Knead until smooth and non-sticky.
  3. Roll out the dough very thin on a floured surface.
  4. Cut the dough into strips about 1 1/2 x 4 inches.
  5. Make a slit in the center of each strip and turn it inside out.
  6. Fry the strips in deep hot oil until they bubble and rise to the top.
  7. Turn them over and fry for about 1 minute until golden.
  8. Remove from oil and drain on paper towels.
  9. Cool completely, then sprinkle generously with powdered sugar.

Tips & Substitutions

For a lighter texture, ensure the dough is rolled out as thin as possible. If you don't have whiskey, lemon juice is a perfect substitute. To prevent the dough from sticking, dust your work surface with extra flour while rolling. Make sure the oil is hot enough; test it by dropping a small piece of dough in—if it bubbles up quickly, it's ready. Enjoy these with a side of Laban for a refreshing contrast.

Serving Suggestions

Serve Krusciki dusted with powdered sugar as a delightful dessert or snack. They pair beautifully with coffee or tea, making them perfect for afternoon gatherings. Consider serving alongside a fruit compote or whipped cream for added flavor. These treats are also fantastic when enjoyed with a side of Southern Style Quail for a unique brunch experience.

Storage & Reheating

Store leftover Krusciki in an airtight container at room temperature for up to 3 days. To retain their crispness, avoid refrigerating them. If you want to reheat, place them in a preheated oven at 350°F (175°C) for about 5 minutes until warm and slightly crispy again.

Frequently Asked Questions

Can I make the dough ahead of time?

Yes, you can prepare the dough and refrigerate it wrapped in plastic wrap for up to 24 hours. Just allow it to come to room temperature before rolling it out and cutting the strips.

What type of oil is best for frying?

For frying Krusciki, a neutral oil with a high smoke point like vegetable oil or canola oil works best. Avoid using olive oil as it has a lower smoke point and can impart unwanted flavors.

Can I bake these instead of frying?

While frying gives Krusciki their signature texture, you can bake them for a healthier version. Preheat your oven to 375°F (190°C), place the strips on a baking sheet, and bake for about 10-15 minutes until golden, flipping halfway through.
