Instructions
- Rub the roast with the butter mixed with the herbs.
- Roast in hot oven at 375° for 1/2 hour.
- Add the stock and baste every 15 minutes.
- Add water, if necessary.
- Roast for 2 hours or until done; use a thermometer.
- Make gravy with drippings by adding 1 tablespoon cornstarch in a little water.
- If you can get a butcher to bone a leg of lamb, stuff it with bread crumbs, chopped onion, chopped tomatoes, 2 beaten eggs, parsley, salt and pepper.
- Roast the same way.
