Lamb Roast(Lammestek)

Ingredients

  • 6 lb. leg of lamb
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 4 Tbsp. butter
  • 1 tsp. basil, crushed
  • 1 tsp. thyme, crushed
  • 1 tsp. rosemary, crushed
  • 2 c. stock or bouillon

Instructions

  1. Rub the roast with the butter mixed with the herbs.
  2. Roast in hot oven at 375° for 1/2 hour.
  3. Add the stock and baste every 15 minutes.
  4. Add water, if necessary.
  5. Roast for 2 hours or until done; use a thermometer.
  6. Make gravy with drippings by adding 1 tablespoon cornstarch in a little water.
  7. If you can get a butcher to bone a leg of lamb, stuff it with bread crumbs, chopped onion, chopped tomatoes, 2 beaten eggs, parsley, salt and pepper.
  8. Roast the same way.
