Larry'S Beef Stroganoff

Ingredients
- 1 lb tenderloin ⓘ
- 3 cups sliced mushrooms ⓘ
- 3 cups demi-glace ⓘ
- 1 cup dill pickles, julienned ⓘ
- 1/2 cup dry white wine ⓘ
- 1 cup sour cream ⓘ
- 1 tablespoon butter ⓘ
- 1 tablespoon oil ⓘ
- 1 tablespoon chopped parsley ⓘ
- 2 tablespoons chopped shallots
- 1/2 oz cognac ⓘ
- 3 oz cooked egg noodles
- 1 teaspoon paprika ⓘ
- salt and pepper ⓘ
Instructions
- Remove all fat from the tenderloin and cut into julienne strips.
- In a sauté pan, heat butter and oil over medium heat.
- Add the tenderloin strips, sliced mushrooms, chopped shallots, paprika, salt, and pepper.
- Cook quickly until the beef is rare.
- Add cognac and flambé.
- Remove the beef and mushrooms from the pan and set aside.
- Deglaze the pan with dry white wine, scraping up any browned bits.
- Add demi-glace and reduce to one-third of its original volume.
- Finish the sauce by stirring in sour cream.
- Return the beef and mushrooms to the pan, add julienned dill pickles, and simmer for 5 minutes.
- While the sauce simmers, boil the egg noodles until tender.
- Drain the noodles and create nests on serving plates.
- Top the noodles with the beef stroganoff and garnish with chopped parsley.
