Ingredients

  • 1 lb tenderloin
  • 3 cups sliced mushrooms
  • 3 cups demi-glace
  • 1 cup dill pickles, julienned
  • 1/2 cup dry white wine
  • 1 cup sour cream
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 1 tablespoon chopped parsley
  • 2 tablespoons chopped shallots
  • 1/2 oz cognac
  • 3 oz cooked egg noodles
  • 1 teaspoon paprika
  • salt and pepper

Instructions

  1. Remove all fat from the tenderloin and cut into julienne strips.
  2. In a sauté pan, heat butter and oil over medium heat.
  3. Add the tenderloin strips, sliced mushrooms, chopped shallots, paprika, salt, and pepper.
  4. Cook quickly until the beef is rare.
  5. Add cognac and flambé.
  6. Remove the beef and mushrooms from the pan and set aside.
  7. Deglaze the pan with dry white wine, scraping up any browned bits.
  8. Add demi-glace and reduce to one-third of its original volume.
  9. Finish the sauce by stirring in sour cream.
  10. Return the beef and mushrooms to the pan, add julienned dill pickles, and simmer for 5 minutes.
  11. While the sauce simmers, boil the egg noodles until tender.
  12. Drain the noodles and create nests on serving plates.
  13. Top the noodles with the beef stroganoff and garnish with chopped parsley.
