Ingredients

  • 2 ripe avocados
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. sour cream
  • 1/2 c. mayonnaise
  • 1 Tbsp. taco seasoning mix
  • 1 large can refried beans (2 c.)
  • 3 Tbsp. salsa
  • 1 c. chopped green onions
  • 2 c. chopped tomatoes
  • 1 c. chopped olives

Instructions

  1. Peel, pit, and mash the avocados in a medium bowl with lemon juice, salt, and pepper.
  2. In another bowl, combine sour cream, mayonnaise, and taco seasoning mix.
  3. Spread refried beans over the bottom of a serving dish.
  4. Layer the seasoned sour cream mixture over the beans.
  5. Top with salsa, chopped green onions, chopped tomatoes, and chopped olives.
