Ingredients

  • 2 lb. lean ground beef
  • 1 (10 oz.) can enchilada sauce
  • 1 (16 oz.) can refried beans
  • 1 can sliced black olives
  • 1 jar medium or mild salsa
  • 1 pkg. taco or enchilada seasoning
  • 1 lb. mild Cheddar cheese
  • 1 Tbsp. dry onion flakes
  • 8 (10-inch) flour tortillas

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add dry onion flakes and taco or enchilada seasoning, cook until fragrant.
  3. Stir in salsa and refried beans, cook until heated through.
  4. Pour half of the enchilada sauce into the bottom of a 9x13-inch baking dish.
  5. Lay 4 tortillas in a single layer over the sauce to cover the bottom of the dish.
  6. Spoon half of the beef mixture over the tortillas.
  7. Top with half of the sliced black olives and one quarter of the grated cheese.
  8. Repeat with remaining tortillas, beef mixture, olives, and cheese.
  9. Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  10. Bake in a low oven or microwave until heated through and cheese is melted.
