Taco Bell Peppers

Ingredients

  • 4 medium green peppers
  • 1 1/2 lb ground beef
  • 1 medium onion
  • 1/2 cup cooked rice
  • 3 cups spaghetti sauce
  • 1 envelope taco seasoning mix
  • dash of pepper
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cut off the tops and remove insides of green peppers.
  2. Parboil peppers in boiling, salted water for 5 minutes; drain.
  3. Brown the ground beef and chopped onion; drain excess fat.
  4. Add 1 cup spaghetti sauce, cooked rice, taco seasoning, pepper, and diced green pepper reserved from tops to the beef mixture; mix well.
  5. Spoon the meat mixture into each pepper shell.
  6. Pour the remaining 2 cups spaghetti sauce over the stuffed peppers.
  7. Sprinkle shredded Cheddar cheese on top of the peppers.
  8. Bake, covered, at 350°F for 30 minutes.
  9. Uncover and bake an additional 15 minutes or until tops are browned.
