Ingredients

  • 1 1/2 lb. potatoes, pared and sliced thin
  • 3/4 c. shredded low-fat Swiss cheese
  • 1/2 c. plain low-fat yogurt
  • 1/2 c. skim milk
  • 1/2 c. chopped green onion
  • 2 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • pepper to taste

Instructions

  1. Combine shredded low-fat Swiss cheese, plain low-fat yogurt, skim milk, chopped green onion, and chopped parsley in a bowl.
  2. Mix well until ingredients are thoroughly combined.
  3. Arrange half of the sliced potatoes in a 2-quart microwave-safe dish.
  4. Spread half of the cheese mixture evenly over the potatoes.
  5. Repeat with remaining potatoes and cheese mixture.
  6. Cover the dish and microwave on high for 15 to 20 minutes or until the potatoes are tender.
  7. Stir once after 8 minutes of cooking.
