Ingredients

  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 garlic cloves peeled and chopped
  • 1 pound canned tomatoes
  • 1 1/2 cups water
  • 1 cup uncooked rice
  • 1/2 teaspoon thyme
  • 1/4 teaspoon salt
  • 1 bay leaf
  • pepper to taste
  • 1/4 cup chopped parsley
  • 1 1/2 pounds shrimp peeled and deveined

Instructions

  1. Saute green pepper, onion, and garlic.
  2. Add all ingredients except shrimp and parsley. Simmer 60 to 75 minutes.
  3. If using Minute Rice, simmer for about 30 minutes or until rice is tender.
  4. Add parsley and shrimp, then simmer until shrimp is cooked through.
  5. Remove bay leaf before serving.
