Ingredients

  • 1/2 cup boiling water
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 well-beaten egg
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon ginger
  • 3/4 teaspoon cinnamon

Instructions

  1. Pour boiling water over the shortening and stir to combine.
  2. Add brown sugar, molasses, and a well-beaten egg; beat well until smooth.
  3. Sift together the flour, salt, baking powder, soda, ginger, and cinnamon, then add to the wet mixture.
  4. Beat until the batter is smooth.
  5. Spray an 8-inch pan with non-stick spray or Pam.
  6. Pour the batter into the prepared pan.
  7. Bake in a preheated 350°F oven for 35 minutes.
  8. Allow to cool in the pan before serving.
