Ingredients

  • 3/4 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon dried thyme
  • 1/2 cup butter
  • 1 cup sugar
  • 2 large eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon grated lemon rind

Instructions

  1. Combine milk, lemon juice, and dried thyme in a saucepan.
  2. Bring the mixture to a boil, then remove from heat and let cool.
  3. In a large mixer bowl, cream the butter until smooth.
  4. Add sugar and beat well until fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Sift together the flour, baking powder, and salt.
  7. Alternately add the dry ingredients and the milk mixture to the butter and sugar, beginning and ending with the dry ingredients.
  8. Stir in the grated lemon rind until well incorporated.
  9. Grease and flour a 9 x 5 x 3-inch loaf pan.
  10. Pour the batter into the prepared pan.
  11. Bake at 325°F (163°C) for 50 minutes, or until a wooden toothpick inserted in the center comes out clean.
  12. Allow the bread to cool before removing from the pan.
  13. Optional: glaze the bread or dust with powdered sugar before serving.
