Ingredients

  • 1 box yellow cake mix with pudding
  • 1 stick butter
  • 1 egg
  • 1 tablespoon lemon flavoring
  • 8 oz. (1 package) softened cream cheese
  • 3 eggs
  • 1 box confectioners' sugar
  • 3 to 5 tablespoons lemon juice

Instructions

  1. Blend the melted butter and beaten egg together.
  2. Mix the butter and egg mixture with the yellow cake mix with pudding until well combined.
  3. Pat the mixture into a 15 x 10-inch baking dish to form the crust.
  4. In a separate bowl, beat the softened cream cheese until smooth.
  5. Add the eggs, confectioners' sugar, lemon flavoring, and lemon juice to the cream cheese and mix until smooth.
  6. Pour the lemon filling over the crust in the baking dish.
  7. Bake in a preheated oven at 350°F (175°C) for approximately 40 minutes or until set.
  8. Allow to cool before serving.
