Ingredients

  • 2 Tbsp. cornstarch
  • 2 c. skim milk
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. margarine
  • 1 medium onion, finely chopped
  • 3/4 lb. boneless chicken breast, cut in strips
  • 1 (10 oz.) pkg. frozen, chopped broccoli, thawed
  • 2 Tbsp. chopped parsley
  • 1 tsp. grated lemon peel (optional)
  • 1/4 c. lemon juice
  • 6 oz. yolk-free noodles, cooked and drained

Instructions

  1. In a small bowl, whisk together cornstarch, skim milk, salt, and pepper until smooth.
  2. Melt margarine in a large skillet over medium heat.
  3. Add chopped onion and chicken strips; sauté for 4 minutes until the chicken is lightly browned.
  4. Add thawed broccoli and cook for 1 minute, then stir in the milk mixture.
  5. Continuously stir, bringing the mixture to a boil over medium-high heat, and boil for 1 minute.
  6. Remove the skillet from heat.
  7. Stir in chopped parsley, grated lemon peel (if using), and lemon juice.
  8. Serve the sauce over cooked noodles, tossing to coat before serving.
