  • 1/4 tsp black pepper
  • 1 c. white dry wine or Sprite
  • 3 Tbsp lemon juice
  • 1/2 lemon thinly sliced
  • 3 Tbsp chopped parsley
  • 3 Tbsp capers

Instructions

  1. In a small bowl, combine flour, salt, and black pepper. Dredge chicken in flour mixture, shaking off excess flour.
  2. In a large frying pan, heat butter and olive oil over medium heat.
  3. Add chicken and cook about 3 minutes per side or until tender.
  4. Remove chicken from pan and keep in a warm place.
  5. Add wine or Sprite to the pan juices, cook for 1 minute, scraping up brown bits from the bottom of the pan.
  6. Add lemon juice, bring to a boil, then return chicken to the pan and cook with lemon slices.
  7. Cook until the sauce slightly thickens, about 2 to 3 minutes.
  8. Garnish with chopped parsley and capers.
  9. Serve over mashed potatoes with green lettuce.
