Lemon Gingersnaps

Ingredients

  • 2 1/2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 tsp. ginger
  • 3/4 c. softened butter
  • 1 egg
  • 1 c. firmly packed brown sugar
  • 1/4 c. molasses
  • 1/4 c. sugar
  • 1 Tbsp. grated lemon rind
  • cinnamon sugar

Instructions

  1. Sift first 5 ingredients together in a bowl; set aside.
  2. Add next 3 ingredients and beat until fluffy.
  3. Add next 3 ingredients to butter mixture and beat well.
  4. Stir in dry ingredients, 1/2 at a time.
  5. Mix well.
  6. Roll in balls and roll in cinnamon and sugar. Place on cookie sheet 2 inches apart.
  7. Bake 10 minutes at 400°. Do not overbake.
  8. Makes 3 to 3 1/2 dozen cookies.
