Ingredients

  • 1 c. persimmon pulp
  • 8 oz. chopped pitted dates
  • 1 1/2 tsp. lemon juice
  • 1/2 c. salad oil
  • 1 3/4 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 tsp. baking soda
  • 1 egg

Instructions

  1. Mix persimmon pulp and lemon juice with baking soda and set aside.
  2. Lightly beat egg, sugar, oil, and chopped dates in a large bowl.
  3. Combine dry ingredients: flour, salt, cinnamon, nutmeg, and cloves.
  4. Add dry ingredients alternately with persimmon mixture to the egg mixture, just until well blended.
  5. Stir in chopped nuts.
  6. Spread batter on a greased and floured jelly roll pan.
  7. Bake at 350°F (175°C) for about 25 minutes until lightly browned.
  8. Cool in the pan for about 5 minutes, then spread with Lemon Glaze.
  9. Cool thoroughly before cutting into 3 x 1.5-inch bars.
  10. Wrap well and store.
